Q: What is it that you sell?
A: We sell everything that both the curious chef and regular foodie need to give molecular gastronomy a try and impress friends, family and customers, be it additives, specialized tools or recipes. More broadly speaking, we aim to make a wide range of products and applications taken from the modernist cooking world accessible to amateur and professional cooks alike.
Q: What is molecular gastronomy?
A: We like to think of it as the fusion of food science and the culinary arts. Molecular gastronomy is a new, exciting kind of cooking that borrows knowledge, techniques and ingredients from the food industry and makes them its own in order to combine tastes, shapes and textures in novel, creative ways.
Q: I’ve never tried anything like this before, and I’m not sure your products are for me.
A: As long as you are interested getting creative in the kitchen, you shouldn’t be afraid to give our products a try. They’re safe, user-friendly, and tons of fun to play with!
Q: I’ve heard that molecular gastronomy is all about chemicals and synthetic food; is this true? Is molecular cooking safe?
A: Yes, molecular cooking is perfectly safe. As for the chemicals you heard about, the truth is, they’ve been probably been a part of your eating habits forever, as food additives such as xanthan gum, soy lecithin or agar-agar are ever present as texturizing agents in a lot of the prepared foods we all buy at the store. Molecular gastronomy is just taking the chemistry of cooking a step further and using these same additives in ways that are more creatively focused.
Q: I’ve been looking at your kits, and I’m interested in buying, but I want to know: what exactly do the kits include?
A: Each molecular gastronomy kit includes everything your need to experiment with the some of the most popular techniques of molecular gastronomy, be it food additives, specialized utensils or step-by-step recipes. All details regarding the contents of our various kits can be found on each kit’s product page in the SHOP section of this site.
Q: I’m interested in your products, but I don’t want to buy a whole kit. What are my options?
A: All of the additives included in our kits are also available on their own in the SHOP, as are some of specialized our utensils. Of course, one of the many advantages of the kits is that they include instructions and recipes which otherwise do not come with the individual products.
Q: Do instructions come in my language?
A: All instructional material, be it in the form of a booklet or a DVD, comes in at least three languages—English, French and Spanish. Please email us at firstname.lastname@example.org for queries pertaining to instructions or recipes in another language.
Q: How can I print a recipe from my recipe DVD?
A: Just open the DVD on your computer; you'll find a PDF file with all the recipes in a printable format.
Q: How much does one sachet of a given additive contain?
A: That varies depending on the additive:
agar-agar: each sachet = 2 grams = about ¾ tsp
gelatin: each sachet = 4 grams = about 2 tsp
calcium lactate: each sachet = 5 grams = about 1½ tsp
sodium alginate: each sachet = 2 grams = about 1 tsp
soy lecithin: each sachet = 2 grams = about 1 tsp
xanthan gum: each sachet = 1 gram = about ¼ tsp
Q: Are there any allergens/traces of allergens in your food additives?
A: Unfortunately, at this time, we are unable to guarantee that any of our additives is completely allergen-free. The liquid aromas included in our volatile flavoring products, on the other hand, are all free from the following allergens: crustacean, shell fish, eggs, fish, wheat, cereals containing gluten, dairy, mustard seed, nuts (including almonds, Brazil nut, cashew, hazelnut, macadamia, pecan, pistachio, pine nut, walnut, coconut), peanuts, sesame seeds, soy beans and soy.
Q: Are your food additives vegetarian/vegan?
A: To the very best of our knowledge (and we like to say we know our stuff), all of our products are vegan, except for our cold soluble gelatin, which is pork-based.
Q: Are your food additives Halal? Are they Kosher?
A: Unfortunately, at this time, we cannot guarantee that our products are Halal nor Kosher.
Q: Are your food additives gluten-free?
A: Yes, they are.
Q: Do your products contain alcohol or have to be used in combination with alcohol?
A: None of our additives contains alcohol, however the recipes featured in the kits from our molecular mixology line—namely, Cosmo R-EVOLUTION, Margarita R-EVOLUTION, Mojito R-EVOLUTION and Cocktail R-EVOLUTION—do call for a variety of ingredients that contain alcohol. On the other hand, 90% of the recipes featured within the Cuisine R-EVOLUTION kit are completely alcohol-free!
Q: Do you offer classes?
A: At this time, we do not, but we might know of someone in your area who does—email us at email@example.com to find out!
Q: Where can I buy your products?
A: While we do not have a storefront of our own, all our products can be purchased right here at www.molecule-r.com.
Q: I don’t feel comfortable buying online. Do you have any resellers in my area?

Q: Can I place a phone order?

Q: How can I pay for my order?
A: We accept both credit cards (Visa, Mastercard and Amex only) and PayPal as payment methods for online orders. Phone orders are credit card only—make sure to have your info ready when you call!

Q: Where do you ship to?
A: We ship worldwide!
Q: Where do you ship from?
A: Depending on your location as well as stock availability, your order may ship from Montreal (in Canada), Champlain (in the state of New York) or Peterborough (in the United Kingdom).
Q: Do you ship to PO boxes?
A: Yes, we do!
Q: How long does shipping take? How much does it cost?
A: Transit times as well as shipping rates depend heavily on a few different factors, the combination of which is unique to each order.
For transit times and shipping rates, please add product(s) to your shopping cart in the SHOP section of the site, go to the cart, fill in all mandatory fields and click the ‘Save’ button at the bottom of the page. The site will then provide you with delivery options based on your delivery location and the contents of your order.
Once your order goes through, we’ll do our best to ship it as soon as possible. Please note, while most orders ship within two business days of being placed, some orders might take a little longer to get out. Q: How will I know my order has shipped?
A: We’ll email you to let you know as soon as your order has been tendered to our carrier. If your shipment is traceable, tracking information should follow within a few hours.
Q: Which carrier do you use?
A: This depends on your location. If you’re based in the States, your order will be shipping with UPS, while orders being sent to Canada will ship with Canada Post. Lastly, if we’re sending your order anywhere outside of North America, it’ll be shipped via either Canada Post or Royal Airmail, depending on your location as well as stock availability.
Q: Will I be provided with a tracking number?
A: All orders being shipped within North America (Canada and the USA) are traceable. As for orders being sent outside of North America, they may or may not be traceable; if yours is, tracking information will be sent to you shortly after we confirm shipping.
Q: Can I pay for faster delivery?
A: At this time, the only shipping options available are those shown on the site after you update your cart—see question “How long does shipping take? How much does it cost?” for details.
